The kitchen reads the room each night. The shape stays the same — antipasti to postres — but the line can change by 6 pm if the day-boat truck shows up with something better. Most plates feed one. The salt-baked branzino feeds two. Vegetarian and pescatarian courses on request, gluten-free pasta with 24-hour notice.
